I love this salad for days when I want something fresh and bright but still crave a bit of boldness and excitement. It’s full of contrasting flavours and textures and is still comforting enough to make you feel satisfied at dinner time. It’s quick to put together and feels like you spent way more time in the kitchen than you actually did.

The Ingredients

  • 2 ribeye steaks
  • 1 tbsp olive oil & 1 tbsp butter
  • 150g mixed salad leaves
  • ½ cucumber & ½ red onion, sliced
  • 200g cherry tomatoes, halved
  • Dressing: 2 tbsp peanut butter, 2 tbsp soy sauce, 1 tbsp sriracha, lime juice, 4 tbsp hot water
  • Garnish: Coriander, 100g chopped peanuts, ½ red chilli

The Instructions

Sear the Steak: Season the steaks with salt, pepper, and olive oil. Sear in a high-heat pan for 1.5 minutes per side. Add the butter, spooning it over the steaks, then remove and let them rest for 5 minutes.

Prep the Base: While resting, arrange the salad leaves, cucumber, onion, and tomatoes on a platter. Whisk the peanut butter, soy sauce, sriracha, and lime juice together, adding hot water to get a pourable consistency.

Assemble: Slice the rested steak against the grain and arrange over the salad. Drizzle generously with the peanut dressing and top with coriander, chopped peanuts, and fresh red chilli.
