Creamy Garlic & Spinach Stuffed Chicken

Stuffed chicken might look fancy, but it’s actually incredibly straightforward to prepare. The combination of garlic, cream cheese, and fresh spinach creates a decadent filling that keeps the chicken breast perfectly moist while it bakes.
This is my favorite weeknight meal when I want something that feels like it came from a restaurant but is simple enough to put together in under an hour. It pairs beautifully with roasted potatoes or a fresh side salad.
The Ingredients
- ✔4 chicken breasts
- ✔120g cream cheese
- ✔100g fresh spinach, chopped
- ✔3 minced garlic cloves
- ✔50g grated mozzarella
- ✔1 tbsp olive oil & Italian seasoning
- ✔Salt and black pepper to taste
The Instructions
Prepare the Filling: In a medium bowl, mix the cream cheese, chopped spinach, minced garlic, and mozzarella until well combined. Season with salt and pepper.
Stuff & Bake: Cut a pocket into the side of each chicken breast. Spoon the mixture into the pockets and seal with toothpicks if needed. Rub the chicken with olive oil and Italian seasoning. Bake at 200°C for 25 minutes or until cooked through and golden.
