The Ingredients

  • 1 (400g) block extra-firm tofu
  • 2 cups fresh pineapple, cubed
  • 1 green & 1 red bell pepper, thinly sliced
  • 1 red onion, sliced & 2 cloves garlic, minced
  • 1-inch ginger, minced & 2 tbsp peanut oil
  • Sauce: 2 cups pineapple juice & 1 tbsp cornstarch
  • 3 tbsp tomato paste & 3 tbsp rice vinegar
  • 2 tbsp agave nectar, 1/2 tsp red pepper flakes & 1/2 tsp salt

The Instructions

Crisp the Tofu: Slice your drained, patted-dry tofu into triangles. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the triangles for about 8 minutes, flipping occasionally until golden. Set aside on a plate.

Stir-Fry Veggies: Add the remaining oil to the same pan. Sauté the sliced peppers and onions for about 5 minutes, letting them char slightly to keep their crunch. In the last minute, create space to add the minced garlic and ginger, cooking for 30 seconds before tossing everything together.

Simmer & Serve: In a bowl, whisk cornstarch into 1/2 cup of pineapple juice until smooth, then stir in the remaining juice, tomato paste, vinegar, agave, pepper flakes, and salt. Return the tofu and pineapple to the pan, pour over the sauce, and cook for about 7 minutes until the sauce is thick, glossy, and perfectly coats every piece. Serve over brown rice and top with fresh scallions.
