The Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 celery stalks, sliced
  • 2 cups (320g) baby carrots, diced
  • 85g dried yuba (tofu skin)
  • 1.4 Liters vegan 'chicken' or vegetable broth
  • 170g angel hair pasta
  • 1 tsp vegan poultry seasoning & 1/2 tsp onion powder
  • 1/2 cup fresh dill, chopped
  • 1/2 tsp sea salt, 1/2 tsp black pepper, plus buttered bread for serving

The Instructions

Fry the Veggies: Heat the olive oil in a large pot over medium heat. Add the diced onion and a generous pinch of salt, cooking until translucent. Stir in the sliced celery and carrots, cooking for about 5 minutes until the vegetables begin to soften.

Build the Broth: Roughly break the dried yuba into large chunks and toss them into the pot. Sprinkle in the poultry seasoning, onion powder, remaining salt, and black pepper, then pour in the broth. Bring the mixture to a rolling boil, reduce the heat to medium-low, and let it simmer for 15 minutes to allow the yuba to become tender.

Noodles & Herbs: Snap the angel hair pasta into thirds and stir it into the soup. Simmer for just 3 minutes until al dente. Remove the pot from the heat, stir in the chopped fresh dill, and adjust the seasoning to taste (add a splash of water if the soup is too thick). Ladle into warm bowls, garnish with extra dill, and serve immediately with buttered bread.
