The Ingredients
- ✔2 tbsp olive oil
- ✔1 medium yellow onion, diced
- ✔2 celery stalks, sliced
- ✔2 cups (320g) baby carrots, diced
- ✔85g dried yuba (tofu skin)
- ✔1.4 Liters vegan 'chicken' or vegetable broth
- ✔170g angel hair pasta
- ✔1 tsp vegan poultry seasoning & 1/2 tsp onion powder
- ✔1/2 cup fresh dill, chopped
- ✔1/2 tsp sea salt, 1/2 tsp black pepper, plus buttered bread for serving
The Instructions
Build the Broth: Roughly break the dried yuba into large chunks and toss them into the pot. Sprinkle in the poultry seasoning, onion powder, remaining salt, and black pepper, then pour in the broth. Bring the mixture to a rolling boil, reduce the heat to medium-low, and let it simmer for 15 minutes to allow the yuba to become tender.
Noodles & Herbs: Snap the angel hair pasta into thirds and stir it into the soup. Simmer for just 3 minutes until al dente.
