Because the kimchi does all the heavy lifting for flavour, you can keep your toppings simple and fresh. It’s my go-to for those evenings when I want something indulgent, fast, and entirely satisfying.

The Ingredients

  • 500g quality ground beef
  • 150g kimchi, finely chopped (plus 1 tbsp juice)
  • 2 tsp gochujang paste (divided)
  • 1 tbsp light soy sauce
  • 4 brioche buns & 4 slices of Cheddar cheese
  • 4 tbsp mayonnaise & 2 baby gem lettuces
  • Olive oil for frying

The Instructions

Mix & Shape: In a mixing bowl, combine the beef, chopped kimchi, kimchi juice, half the gochujang, and soy sauce. Form into 4 equal patties. Placing a square of parchment paper on each makes smashing them into the pan much easier later!

Sear & Melt: Get a pan very hot with a little oil. Smash the patties down firmly with a spatula. Fry for 2 minutes per side until you get a great crust. Pop a slice of cheese on each, then cover the pan for a moment to get that perfect melt.
