Sopapilla Cheesecake Bars
Among the most well-loved desserts, these sugary treats pair a rich, creamy cheesecake filling with a buttery, crispy cinnamon-sugar crust.
These sopapilla cheesecake bars take everything you adore about traditional Mexican fried pastries and blend it seamlessly with the velvety indulgence of homemade cheesecake. Layered between flaky, golden crescent dough sheets, the rich cream cheese center melts in your mouth with every bite.
Topped generously with melted butter and crackly cinnamon sugar, this dessert fills your entire home with a warm bakery aroma while it bakes. Slice them into squares and serve warm for an instant crowd favorite at parties, potlucks, or family dinners.
The Ingredients
- ✔32 oz cream cheese, room temperature
- ✔2 ½ cups white sugar, divided
- ✔2 tsp vanilla extract
- ✔2 cans crescent sheets
- ✔1 tsp ground cinnamon
- ✔¼ cup unsalted butter, melted
The Instructions
Prep & Cream: Preheat an oven to 350°F (175°C). Spray a 9 x 13-inch baking pan with cooking spray. In a large bowl, whisk together the room-temperature cream cheese, 1½ cups of white sugar, and the vanilla extract until completely smooth and lump-free.
Bottom Layer: In a separate small bowl, whisk together the remaining 1 cup of sugar and the cinnamon. Unroll the first sheet of crescent dough and press it evenly into the bottom of the prepared 9 x 13-inch baking pan.
Fill & Top: Sprinkle half of the cinnamon-sugar mixture evenly over the bottom dough layer. Spread the prepared cream cheese mixture smoothly on top, then carefully roll the second sheet of crescent dough over the cream cheese layer.
Bake & Serve: Brush the top dough sheet completely with the melted butter, then sprinkle the remaining cinnamon-sugar mixture over the surface. Bake for 40 to 45 minutes until puffed and golden brown. Serve warm, and enjoy!

Easy Layering & Clean Slices
Make sure your cream cheese is completely at room temperature so it beats into a silky, easily spreadable layer without tearing the dough. For clean, bakery-style cuts, let the pan cool slightly before slicing with a lightly oiled chef's knife!
